I've made this same point here before. The Hudgens Sisters are Filipino, Chinese, and Spanish on their mother's side, and Irish, Native American, and French on their father's side, but since I've only ever seen them claim Filipino I lean heavier towards Asian then Latin.
 
Not sure where you got this info from. This is what it says publicly: Her father is English / German / Scottish / Irish, Her mother is from the Philippines with some Chinese and Spanish mixed in. When talking about ethnicity, Spanish refers to European Spain, not South America.
